As much as we love bananas in our house there always seem to be a few we don’t get to eat before they start looking a bit too ripe. I’m sure you can relate! So, without a doubt, the best thing to do is freeze the bananas until I’m ready to bake this simple banana bread recipe.
This recipe is yet another family favorite from a recipe book my mom created many years ago.

Best Type Of Pans for Baking This Banana Bread
Most often I will use a traditional loaf pan or bread pan when baking this recipe. However, there have been occasions when I’ve used a cupcake pan for ease of sharing this delicious treat with the family.
You could also use this mini loaf pan if you were perhaps making it to give away as a gift. A fresh loaf of banana bread makes a wonderful gift during the holidays or even as part of a self-care gift basket.

Sounds great! I’ll give this one a try with my daughter next time she’s wanting to bake with me 🙂
Oh good! I don’t think you will regret it!!
Can I use coconut oil? We don’t eat fake oils.
Hi Lisa! Yes, you can use coconut oil as a replacement for vegetable oil.
It would be really helpful if you’d give an approximate cup amount for the bananas. I freeze mine measured/mashed. (I have mini bananas plants and the bunches ripen almost all at once.) Anyway one person’s medium is another’s small. Just saying. ;<)
I’m so sorry the way I have it written isn’t helpful to you. I’ve always just followed the 4 medium bananas rule. Thank you for the suggestion.
I can certainly relate with you on extra bananas – seems like I throw away a few each week! This is an excellent recipe and I plan to take your advice and include in gift baskets over the holidays!
The extra bananas sure do add up. I will sometimes freeze them and use them in smoothies too. I hope you enjoy the recipe.
