Ingredients
  

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup heavy cream (plus more for brushing onto pastry)
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 cup fresh peaches, diced
  • 1 tbsp. sugar (optional for sprinkling onto pastry)

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  • Pour the wet ingredients into the flour mixture and stir until just combined. Be careful not to overmix.
  • Gently fold in the diced peaches until evenly distributed throughout the dough.
