Why add baking soda to this caramel corn recipe?
Baking soda is added to caramel popcorn to make the caramel light and crunchy. When baking soda is mixed into the hot caramel, it reacts with the sugar and butter, creating tiny air bubbles. These bubbles help the caramel coat the popcorn more evenly and prevent it from becoming too hard, so you get that perfect crisp texture instead of a sticky or overly chewy coating
Why does caramel corn get soggy?
Caramel corn gets soggy when the caramel absorbs moisture, either from the air or the popcorn. This happens if the caramel isn’t cooked to the right temperature or if it’s stored in a humid, non-airtight container. To keep it crispy, bake the caramel-coated popcorn to help the caramel set properly.
How do you make caramel popcorn crispy again?
To make caramel popcorn crispy again, spread it out on a baking sheet and bake it at 250°F (120°C) for about 10–15 minutes. Stir it every 5 minutes to ensure it heats evenly. This will help the caramel harden and restore the crispiness. Be sure to let it cool completely before storing it in an airtight container.
Oven Caramel Corn
Ingredients
- 15 cups popped corn
- 1 cup light brown sugar
- 1/2 cup butter or margarine
- 1/4 cup light corn syrup
- 1/2 tsp salt
- 1/2 tsp baking soda
Instructions
- Heat oven to 200 degrees.
- Divide popped corn between 2 ungreased baking pans 13 x 9 x 2" or one extra-large baking pan.
- In a saucepan heat brown sugar, butter, corn syrup, and salt stirring occassionaly until bubbly around edges.
- Continue cooking over medium head for 5 minutes.
- Remove from heat.
- Stir in baking soda until foamy.
- Pour over popped corn striring until corn is well coated.
- Bake for 1 hour, stirring every 15 minutes.
