1/3cupCoconut oil (melted and slightly cooled)
1Egg (large)
3/4cupButtermilk (or ¾ cup milk + 1 teaspoon lemon juice)
1tbsp.Lemon zest
2tbsp.Fresh lemon juice
1/2tspVanilla extract
Glaze Ingredients
1cupPowdered sugar
3tbsp.Fresh lemon juice
1tsp Lemon zest (optional for extra flavor)
Instructions
Preheat your oven to 350°F (175°C).
Line a muffin tin with paper liners or lightly grease it to prevent sticking.
In a large bowl, whisk together the flour (gluten-free or regular), baking powder, baking soda, salt, and poppy seeds.
In a separate bowl, mix the melted coconut oil, honey, egg, buttermilk (or lemon milk substitute), lemon zest, lemon juice, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. Be careful not to overmix.
Spoon the batter evenly into the muffin cups, filling each about 2/3 full. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Once they’ve cooled completely, drizzle with the lemon glaze.
Making The Glaze
Whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
Adjust the consistency: If you prefer a thinner glaze, add a bit more lemon juice, a teaspoon at a time. If you want a thicker glaze, add a little more powdered sugar.
