Simple Banana Bread

This banana bread is so yummy you will want to eat it for breakfast, lunch, dinner, and a snack. It's so easy to make that even the kiddos can help or let them do the work and you supervise.

Ingredients
  

  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 extra large eggs
  • 4 medium bananas (soft & ripe but not rotting)
  • 1 tsp vanilla
  • 2 cups flour
  • 1 ½ tsp baking soda
  • tsp salt

Instructions
 

  • Preheat the oven to 350 degrees.
  • Grease two loaf pans (bread pans).
  • Mash bananas with a fork or use a mixer.
  • Add sugar, oil, eggs, and vanilla to bananas and mix well on medium speed.

  • Sift together flour, baking soda, and salt. Add this to the above ingredients and mix thoroughly.
  • OPTIONAL: Add 1 cup of chocolate chips, nuts, raisins, dried cranberries, or whatever your heart desires.
  • Pour mixture into greased loaf pans.

  • Bake for 25-30 minutes or until the bread is done. You can test to see if the bread is done by inserting a toothpick into the center of the bread. If the toothpick is clean upon removal the bread is done.
