Ingredients
  

  • 3 cups Gluten-free rolled oats
  • 1 cup Mix of cashews, dried cranberries & pineapple I used trailmix
  • ¼ cup Ground flax seeds
  • ¼ cup Coconut oil, melted
  • ¼ cup honey or maple syrup
  • 1 tsp. Vanilla extract
  • ½ tsp. Ground cinnamon
  • ¼ tsp. Salt

Instructions
 

  • Preheat your oven to 325℉ (163℃) and line a baking sheet with parchment paper.
  • In a large bowl, combine gluten-free rolled oats, the cashew and dried fruit mix, ground flax seeds, and almonds.
  • In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), vanilla extract, ground cinnamon, and salt.
  • Pour the wet ingredients over the dry ingredients, stirring until everything is well coated.
  • Spread the mixture evenly on the prepared baking sheet.
  • Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  • Remove from oven and let cool completely on the baking sheet.
  • Once cooled, transfer the granola to an airtight container for storage.
